Ingredients

  • large cherry tomatoes 
  • cups couscous cooked
  • 0.5 teaspoon rosemary dried
  • 0.3 cup yogurt plain fat-free
  •  garlic clove minced
  • 1.5 teaspoons ground cumin 
  • 0.5 pound leg of lamb boneless lean
  • teaspoons olive oil 
  • small onion cut into 4 wedges
  • tablespoon onion finely chopped
  • 0.5 teaspoon pepper 
  • 0.3 teaspoon salt 
  • cups zucchini sliced (1-inch)

Directions

  1. Trim fat from lamb.
  2. Cut lamb into 1-inch pieces.
  3. Combine yogurt and next 7 ingredients in a large zip-top plastic bag.
  4. Add lamb; seal bag, and marinate in refrigerator 8 hours, turning bag occasionally.
  5. Remove lamb from bag, reserving marinade.
  6. Thread lamb, zucchini, tomatoes, and onion wedges alternately onto 4 (10-inch) skewers.
  7. Prepare grill.
  8. Place kebabs on a grill rack coated with cooking spray; grill 7 minutes on each side or until done, basting occasionally with reserved marinade.
  9. Serve kebabs with couscous.
  10. Note: If using wooden skewers, soak them in water 30 minutes before grilling.
