  • tsp baking soda 
  • 0.3 cup butter softened
  • 0.5 cup dates chopped
  •  eggs 
  • cups flour 
  • tsp ground cinnamon 
  • 0.8 cup milk 
  • 0.3 cup nonfat yogurt plain greek-style
  • 0.5 tsp salt 
  • 1.3 cups sugar 
  • 0.5 cup planters walnuts chopped
  • cup zucchini grated

Directions

  1. Heat oven to 350F.
  2. Mix first 4 ingredients. Beat butter and sugar in large bowl with mixer until blended.
  3. Add zucchini, milk, yogurt and eggs; mix well. Gradually add flour mixture, beating after each addition just until moistened. Stir in nuts and dates.
  4. Pour into greased and floured 9x5-inch loaf pan.
  5. Bake 1 hour or until toothpick inserted in center comes out clean. Cool 5 min.; remove from pan to wire rack. Cool completely.
