Ingredients

  • teaspoons pepper black
  • 0.3 cup cilantro leaves fresh coarsely chopped
  •  garlic clove crushed
  • tablespoons spring onion finely chopped
  • teaspoons ground cumin 
  • cup juice of lime fresh ( 8 limes)
  • 1.5 teaspoons olive oil 
  • teaspoons oregano dried
  • pounds pork tenderloin 
  • servings salsa 
  • 1.5 teaspoons salt 

Equipment

  • kitchen thermometer

Directions

  1. Combine first 6 ingredients in a 2-quart baking dish. Trim fat from pork.
  2. Place pork in dish, turning to coat; cover and marinate in refrigerator 1 hour, turning pork occasionally.
  3. Prepare grill.
  4. Remove pork from dish; discard marinade.
  5. Brush with oil. Insert a meat thermometer into thickest portion of pork.
  6. Place on a grill rack coated with cooking spray; grill 25 minutes or until thermometer registers 160 (slightly pink).
  7. Cut into 1/4-inch-thick slices.
  8. Sprinkle with cilantro and green onions.
  9. Serve with Grilled-Pineapple Salsa.
