Ingredients

  • ounces farfalle pasta uncooked (bow-tie)
  • 0.3 cup red wine vinegar 
  • tablespoon basil dried fresh finely chopped
  • tablespoon capers 
  • tablespoons vegetable oil 
  • 0.3 teaspoon garlic powder 
  • ounces mozzarella cheese cubed
  • 0.5 cup pepperoncini peppers italian drained chopped (bottled peppers)
  • 0.3 cup olives pitted ripe cut in half
  • 0.3 cup pepperoni sliced ( 20 slices)
  • medium bell pepper red cut into 2x1/4-inch strips
  • 0.5 medium zucchini 
  • ounces artichoke hearts frozen thawed drained cut into fourths

Directions

  1. Cook and drain pasta as directed on package. Rinse with cold water; drain.
  2. Mix vinegar, basil, capers, oil and garlic powder. In large glass or plastic bowl, toss pasta, vinegar mixture and remaining ingredients. Cover and refrigerate at least 1 hour to blend flavors but no longer than 24 hours.
