Ingredients

  • cups flour all-purpose
  • 0.3 cup sugar 
  • teaspoons double-acting baking powder 
  • 0.5 teaspoon salt 
  • tablespoons butter cut into pieces
  • 0.5 cup apples peeled finely chopped
  • 0.3 cup candied ginger finely chopped
  •  eggs 
  • 0.5 cup whipping cream 
  • 0.5 teaspoon lemon zest grated
  • 0.8 cup powdered sugar 
  • tablespoons juice of lemon fresh

Directions

  1. Heat oven to 400°F. Spray cookie sheet with nonstick cooking spray. In medium bowl, combine flour, sugar, baking powder and salt; mix well. With pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Stir in apple and ginger.
  2. Beat egg in small bowl. Stir in cream and lemon peel.
  3. Add to dry ingredients; stir just until moistened.
  4. On floured surface, gently knead dough 5 or 6 times.
  5. Place dough on sprayed cookie sheet; press to form 8-inch round, about 1 inch thick.
  6. Cut into 8 wedges; separate wedges slightly.
  7. Bake at 400°F. for 15 to 20 minutes or until light golden brown and center is set.
  8. In small bowl, combine powdered sugar and lemon juice; blend well.
  9. Drizzle warm scones with glaze.
  10. Serve warm.
