This recipe is perfect for lunch or dinner and serves six people. Not only is it ready in just 45 minutes, but it's also packed with flavor and has a caloric content of only 215 kcal per serving.

The star of this recipe is, of course, the apricot glaze. Made with 0.8 cups of apricot preserves, 10.8 ounces of low-sodium chicken broth, 1 tablespoon of cornstarch, and 1 tablespoon of light soy sauce, this glaze creates a sweet and savory sauce that perfectly complements the juicy chicken breasts. And with the added bonus of being dairy-free, this dish is sure to please even the most discerning palate.

To make this recipe, you'll need a frying pan and just a few simple ingredients. Start by spraying a large skillet with nonstick cooking spray and browning the chicken breasts. Then, add the chicken broth, apricot preserves, and soy sauce to the pan and let it simmer for 20 minutes until the chicken is cooked through. Finally, thicken the sauce with cornstarch and water and return the chicken to the pan to coat it thoroughly with the glaze.
