  • 0.5 teaspoon aniseed 
  • 0.3 teaspoon pepper black freshly ground
  • ounce bottled clam juice 
  • 0.5 pound fennel bulb cut into 8 wedges
  • cup fennel bulb finely chopped
  • 0.5 teaspoon thyme sprigs fresh chopped
  •  garlic clove minced
  • teaspoons olive oil divided
  • cup onion finely chopped
  • 0.8 teaspoon saffron threads crushed
  • 24 ounce salmon fillet 
  • 0.5 teaspoon salt 
  • tablespoons shallots finely chopped
  • tablespoons tomato paste 
  • cups water 
  • 12 ounces yukon gold potatoes cubed peeled

Directions

  1. Heat 1 teaspoon oil in a large saucepan over medium heat.
  2. Add onion and next 6 ingredients (onion through garlic); cook 7 minutes or until tender, stirring frequently. Stir in water, tomato paste, and clam juice; bring to a boil. Reduce heat, and simmer 45 minutes.
  3. Strain mixture through a sieve over a bowl; discard solids. Return mixture to pan; bring to a boil.
  4. Add potato; cook 5 minutes.
  5. Add fennel; cook 4 minutes.
  6. Remove from heat, and keep warm.
  7. Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat.
  8. Sprinkle fish with salt and pepper.
  9. Add fish to pan; cook 3 minutes on each side or until fish flakes easily when tested with a fork.
