Ingredients

  • pounds asparagus fresh trimmed cut into 2-inch pieces
  • tablespoon parsley fresh minced
  •  garlic clove minced
  •  spring onion chopped
  • tablespoons bell pepper diced green
  • tablespoons juice of lemon 
  • 0.3 cup olive oil 
  • tablespoon onion diced
  • 0.3 teaspoon pepper 
  • 0.8 teaspoon salt 
  • tablespoons pickle relish sweet

Directions

  1. Place asparagus in a steamer basket.
  2. Place in a saucepan over 1 in. of water; bring to a boil. Cover and steam for 6-8 minutes or until crisp-tender. Rinse with cold water; drain well.
  3. Place in a bowl; add the green onions, green pepper, pickle relish and garlic.
  4. In a small bowl, whisk the oil, lemon juice, onion, parsley, salt and pepper.
  5. Pour over asparagus mixture and toss to coat. Cover and refrigerate until chilled.
  6. Serve with a slotted spoon.
