  •  avocado diced pitted peeled
  • cups chicken stock see 
  • 0.3 teaspoon nutmeg 
  • cup cup heavy whipping cream 
  • tablespoon olive oil 
  • servings salt and pepper to taste
  • tablespoon shallots chopped
  •  tomatoes diced peeled seeded

Directions

  1. Puree avocado in a blender or food processor until smooth.
  2. Sautee chopped shallots in olive oil until tender but not brown; set aside to cool.
  3. In a large bowl, whisk together avocado with chicken stock, heavy cream and shallots until smooth. Stir in salt, pepper and nutmeg; adjust seasonings to taste.
  4. Chill for at least half an hour before serving.
  5. Garnish with diced tomato.
