Ingredients

  • 0.5 cup brown sugar packed
  • 0.5 cup butter 
  • 1.5 cups buttermilk 
  • servings mrs richardson's butterscotch caramel sauce 
  • large eggs 
  • cup flour all-purpose
  •  apples i use 2 granny smith apples peeled thinly sliced
  • tablespoons granulated sugar 
  • 0.5 teaspoon ground cinnamon 
  • 0.5 cup pecans chopped
  • servings pecans toasted chopped
  • servings powdered sugar 
  • 0.5 teaspoon salt 
  • teaspoon vanilla extract 
  • servings whipped cream

Directions

  1. Whisk together eggs and next 4 ingredients. (
  2. Mixture will be lumpy.)
  3. Add buttermilk and vanilla, whisking until batter is blended.
  4. Coat 8 (7- x 4- x 1 1/2-inch) oval baking dishes with cooking spray.
  5. Place 1 tablespoon butter in each dish.
  6. Bake at 425 for 3 to 4 minutes or until butter melts.
  7. Place apple slices evenly into dishes; bake 5 more minutes. Spoon about 1/2 cup batter into each dish.
  8. Sprinkle evenly with brown sugar and 1/2 cup chopped pecans.
  9. Bake 20 more minutes.
  10. Sprinkle pancakes with powdered sugar, and top with a scoop of vanilla ice cream; drizzle with Caramel Sauce, and sprinkle with chopped, toasted pecans.
