  • pounds bacon 
  • tablespoon chives minced
  • teaspoons pepper black
  • cups mayonnaise 
  • cups nacho cheese dip 
  • large onion finely chopped
  • 10 pounds potatoes - remove skin red
  • teaspoons salt 
  • cups sharp cheddar cheese shredded
  • cups cream sour

Directions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes.
  2. Drain, cool, and cut into cubes.
  3. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes.
  4. Drain bacon slices on paper towels; crumble.
  5. Preheat oven to 325 degrees F (160 degrees C). Lightly grease an 8-quart baking dish.
  6. Combine potatoes and bacon in a large bowl.
