Ingredients

  • 0.3 cup butter softened
  • tablespoon cilantro leaves fresh chopped
  • 0.5 teaspoon lemon zest grated
  • pound fish fillet 
  • 0.3 teaspoon salt 
  • 0.3 teaspoon ground cumin 
  • tablespoon juice of lemon

  • aluminum foil

Directions

  1. Heat oven to 425°. Line rectangular pan, 13x9x2 inches, with aluminum foil; spray foil with cooking spray.
  2. Mix butter, cilantro and lemon peel. Cover and refrigerate butter while preparing fish.
  3. Cut fish into 4 serving pieces.
  4. Place fish, skin side down, in pan.
  5. Sprinkle with salt and cumin.
  6. Drizzle with lemon juice.
  7. Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Carefully lift fish from skin with pancake turner. Top each serving of fish with some cilantro butter mixture.
