Ingredients

  • teaspoon double-acting baking powder 
  • teaspoon baking soda 
  • medium size banana ripe mashed
  • tablespoons canola oil 
  • large eggs lightly beaten
  • teaspoon ground cinnamon 
  • 0.5 cup sugar 
  • teaspoons vanilla extract 
  • 0.5 cup walnut pieces toasted chopped
  • 1.5 cups flour whole wheat

Directions

  1. Stir together first 4 ingredients in a large bowl; make a well in center of mixture.
  2. Stir together bananas and next 4 ingredients; add to flour mixture, stirring just until dry ingredients are moistened. Gently fold in walnuts.
  3. Pour batter into a 9- x 5-inch loaf pan coated with cooking spray.
  4. Bake at 350 for 55 minutes to 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack.
  5. Serve with light whipped cream cheese, if desired.
