Ingredients

  • 0.5 teaspoon ground pepper 
  • 1.5 tablespoons chili powder 
  • 0.3 cup apple cider vinegar 
  • 0.5 cup t brown sugar dark packed
  • tablespoon t brown sugar dark packed
  • 24 small dinner rolls 
  • teaspoon thyme dried
  • tablespoon ground mustard dry
  • tablespoon garlic powder 
  •  bell pepper green seeded chopped
  • teaspoon mustard dried
  • tablespoon onion powder 
  •  onion chopped
  • teaspoon oregano dried
  • tablespoon paprika 
  • lb roasted 
  •  onion red thinly sliced
  • teaspoon salt 
  • 20 servings salt and pepper 
  • tablespoon sugar 
  • oz canned tomatoes canned
  • 0.5 cup vinegar white
  • teaspoons worcestershire sauce

Directions

  1. Combine all ingredients and rub all over meat.
  2. Place pork on a large plate, cover with plastic wrap and refrigerate for 8 hours or overnight.
  3. Combine all ingredients in slow cooker, place pork on top and cook on high for 5 1/2 hours, until meat is tender and can be shredded easily with a fork.
  4. Make pickled onion: Stir sugar and salt into vinegar until dissolved; stir in onion. Cover and refrigerate for 2 to 3 hours, stirring occasionally.
  5. Remove pork from slow cooker.
  6. Remove 2 cups of sauce. Shred meat. Stir pork back into slow cooker, cover and cook for 15 minutes.
  7. To serve, split rolls, top with meat and pickled onion.
  8. Serve, passing reserved sauce separately.
