There is something undeniably comforting about a dish that transforms humble beef short ribs into a luxurious, fall-off-the-bone masterpiece. This Braised Hoisin Beer Short Ribs recipe is a symphony of deep, savory flavors that perfectly balances the umami richness of dark beer with the sweet, complex notes of hoisin sauce. What sets this dish apart is the unique pairing of a crisp ale, like Bass, which penetrates the meat to tenderize it while infusing it with a subtle maltiness that complements the robust beef. The slow braising process, simmered for over two and a half hours, ensures that the connective tissues break down completely, leaving you with incredibly succulent ribs that are as easy to eat as they are delicious.

While the ribs steal the show, the accompanying sides elevate this meal from a simple dinner to a gourmet experience. The Creamy Mashed Yukon Gold potatoes offer a velvety, buttery canvas that absorbs the luscious braising liquid, adding a silky texture that contrasts beautifully with the tender meat. For a refreshing crunch and a burst of fresh flavor, the sesame snow peas provide a vibrant green accent and a hint of nuttiness from the toasted seeds. This meal is not just about indulgence; it is a celebration of technique and flavor layering. Whether you are hosting a dinner party or simply craving a hearty, sophisticated comfort food, this recipe delivers an unforgettable culinary journey that will leave your guests asking for seconds.

Ingredients

  • 12 ounces ale good (recommended: Bass)
  • pounds beef short ribs
  • 0.5 stick butter melted
  • bunch chives chopped
  • tablespoon sesame oil dark
  • 10  garlic cloves smashed
  • inch ginger peeled sliced into 1/4-inch slices
  • cup half-and-half
  • cup hoisin sauce
  • tablespoons rice wine vinegar
  • servings salt and pepper
  • servings salt and pepper freshly ground
  • teaspoon sesame seed
  • pound snow peas
  • tablespoons vegetable oil
  • tablespoons vegetable oil
  • pounds yukon gold potatoes peeled

Equipment

  • sauce pan
  • oven
  • pot
  • hand mixer
  • stove
  • dutch oven

Directions

  1. Season the ribs generously with salt and pepper.
  2. Heat the vegetable oil in a large heavy pot with a lid (Dutch oven) over high heat. Brown the ribs on all sides, in batches if necessary.
  3. Remove the ribs and pour off all but a couple tablespoons of the rendered fat.
  4. Return the pot to the stove, lower the heat to medium and saute the garlic and ginger for about 3 minutes.
  5. Add the ribs back to the pot.
  6. Add the beer and the vinegar. Stir and then cover and simmer for 2 1/2 hours.
  7. Preheat the oven to 300 degrees F.
  8. Pour the hoisin sauce over the ribs, move the pot to the oven, and cook, uncovered, for 30 minutes.
  9. Remove ribs and ginger from sauce. Strain fat from the top of the pot so that you're left with just the good stuff.
  10. Serve with Creamy Mashed Yukons and Sesame Snow Peas.
  11. Boil potatoes until fork tender.
  12. Heat the butter and half-and-half over medium heat until hot, but not boiling.
  13. Drain the potatoes, return them to the pot and mash with a hand masher.
  14. Add hot liquid to potatoes and whip with an electric hand mixer until smooth. Season, to taste, with salt and pepper.
  15. Add chives and mix before serving.
  16. Rinse the peas and trim off the ends. In a large saucepan over medium-high heat, add the oils and heat.
  17. Add snow peas and saute until bright green, about 2 to 3 minutes. Season with salt and pepper, to taste.
  18. Sprinkle with the sesame seeds and toss.
