Ingredients
- 1 bay leaves
- 1 cup broccoli florets fresh chopped
- 0.3 cup butter cubed
- 6 ounces crabmeat drained canned
- 3 cups chicken broth
- 0.3 teaspoon thyme dried
- 0.3 cup flour all-purpose
- 1 cup mushrooms fresh sliced
- 1 cup mushrooms fresh sliced
- 1 garlic clove minced
- 1 cup half and half
- 1 cup leek white sliced ( serving only)
- 0.1 teaspoon pepper
- 4 ounces swiss cheese shredded

Directions
- In a large saucepan, saute the leeks, mushrooms and broccoli in butter until tender.
- Add garlic; cook 1 minute longer.
- Add the flour, thyme, pepper and bay leaf; mix well. Stir in broth and cream. Bring to a boil; cook and stir for 2 minutes or until thickened.
- Add the cheese and crab; stir until cheese is melted and soup is heated through. Discard bay leaf.
