  • 0.5 teaspoon pepper black freshly ground
  • pound broccoli florets chopped
  • tablespoons butter chilled cut into small pieces
  • tablespoons dijon mustard 
  • 1.3 cups less-sodium chicken broth fat-free
  • tablespoons flour all-purpose
  • teaspoon thyme leaves fresh chopped
  • 0.5 teaspoon garlic minced
  • 0.1 teaspoon ground nutmeg 
  • ounces gruyère cheese shredded
  • 1.5 cups milk 2% reduced-fat
  • 0.8 teaspoon salt divided
  • 0.8 cup shallots minced ( 4 large)
  • pounds yukon gold potatoes peeled cut into 1/8-inch-thick slices

Directions

  1. Preheat oven to 37
  2. Combine first 6 ingredients in a large bowl.
  3. Sprinkle with 1/2 teaspoon salt and pepper; toss to combine.
  4. Layer one-third of potato slices in a 13 x 9-inch baking dish coated with cooking spray, overlapping to fit; top with half of broccoli mixture. Repeat layers, ending with potato.
  5. Sprinkle evenly with remaining 1/4 teaspoon salt.
  6. Place 3 tablespoons flour in a medium bowl. Gradually add milk, stirring constantly with a whisk; stir in broth.
  7. Pour milk mixture over potato mixture. Top evenly with butter. Cover and bake at 375 for 1 hour. Uncover; sprinkle evenly with cheese.
  8. Bake 25 minutes or until browned. Cool on a wire rack 10 minutes.
