Suggestions

This brown rice mushroom pilaf is a hearty and flavorful dish that's perfect for a cozy night in. It's a simple recipe with a short ingredient list, but it delivers on taste and texture. The brown rice adds a nutty flavor and chewy texture, while the mushrooms lend an earthy aroma and a juicy bite. It's a great side dish to serve with roasted meats or grilled vegetables, but it can also shine as a satisfying vegan main course.

What sets this pilaf apart is the combination of sauteed onions and mushrooms. Cooking these two ingredients together creates a savory base that infuses the rice with flavor. The addition of unrefined sunflower oil adds a subtle nuttiness that enhances the overall taste. The pilaf is also incredibly nutritious, offering a good source of plant-based protein, fiber, and essential vitamins and minerals.

This recipe is a great choice if you're looking for a comforting and wholesome meal. It's perfect for meal prep, as the flavors develop even more over time. Serve it as a side or main, and don't be surprised if it becomes a staple in your recipe repertoire!

Ingredients

  • large onion chopped
  • cup brown rice
  • cup mushrooms fresh canned sliced (I used small-size champignons; don't use mushrooms because they're absolutely tasteless.)
  • tbsp unrefined sunflower oil
  • cups water
  • servings sea salt to taste
  • 0.3 tsp pepper

Equipment

  • sauce pan

Directions

  1. Heat oil in a large saucepan over medium heat. Saut chopped onion and sliced mushrooms for 5 minutes.
  2. Add brown rice and stir to coat in oil.
  3. Add water.
  4. Bring to a boil, then simmer for 30 minutes.
  5. Remove from heat and cover with a lid.
  6. Let it rest until all liquid is absorbed.
