Ingredients

  • 0.5 teaspoon baking soda 
  • cup brown sugar packed
  • cup butter cold cubed
  • pound dates whole pitted
  • 1.5 cups flour all-purpose
  • teaspoon ground cinnamon 
  • 1.5 cups rolled oats 
  • 0.7 cup orange juice 
  • teaspoons vanilla extract 
  • 24 servings whipped cream 
  • 0.8 cup walnut pieces coarsely chopped

Directions

  1. In a small saucepan, combine the dates, brown sugar and orange juice. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened and dates are tender, stirring constantly.
  2. Remove from the heat; stir in vanilla.
  3. In a large bowl, combine the flour, oats, brown sugar, cinnamon, baking soda and salt.
  4. Cut in butter until crumbly. Press half into a greased 13-in. x 9-in. baking dish. Carefully spread with date mixture.
  5. Stir walnuts into remaining crumb mixture.
  6. Sprinkle over filling; press down gently.
  7. Bake at 350° for 25-30 minutes or until lightly browned. Cool on a wire rack.
  8. Cut into squares.
  9. Serve with ice cream if desired.
