The heart of this recipe lies in its homemade or store-bought pie dough, which adds a buttery, flaky texture that complements the cherry filling beautifully. The use of pure almond extract and lemon juice adds depth to the dish, enhancing the natural flavors of the cherries.

To achieve the perfect pie, the recipe calls for a unique two-step baking process. First, the pies are baked at a high temperature of 475 degrees Fahrenheit for about 5 minutes, which helps to set the crust. Then, the temperature is reduced to 375 degrees Fahrenheit, allowing the filling to bubble and the crust to turn a golden brown. The result is a pie that is both stunning to behold and irresistible to taste.

Whether you're a seasoned baker or a pie enthusiast looking to expand your repertoire, Bubby's Sour Cherry Pie is a must-try. With its rich flavors, beautiful presentation, and comforting homemade touch, it's sure to become a new favorite in your dessert rotation. So, gather your ingredients, preheat your oven, and let's get baking!

  • tablespoons .3 oz. of pearl tapioca
  • 0.5 cup butter unsalted melted

Equipment

  • oven
  • wire rack

Directions

  1. In a large bowl, mix together the cherries, sugar, tapioca, butter, lemon juice, almond extract and salt.
