  • 0.3 cup pumpkinseed kernels unsalted
  • 8.5 ounce corn muffin mix (such as Jiffy)
  • 10 ounce regular corn frozen cream-style thawed
  • ounces cheddar cheese shredded reduced-fat
  • 0.3 cup nonfat buttermilk

Directions

  1. Preheat oven to 40
  2. Combine first five ingredients in a large bowl, stirring until dry ingredients are moistened. Spoon into an 8-inch square baking dish coated with cooking spray.
  3. Sprinkle top of batter with pumpkinseeds.
  4. Bake at 400 for 20 minutes or until a wooden pick inserted in center comes out clean.
