Ingredients

  • 0.5 teaspoon caraway seeds 
  • servings crackers and crudités assorted
  • ounces cream cheese at room temperature
  • clove garlic chopped
  • ounces guinness stout 
  • 0.5 teaspoon paprika 
  • tablespoons parsley chopped
  • servings salt and pepper 
  •  shallots finely chopped
  • ounces sharp cheddar grated
  • tablespoons butter unsalted

Equipment

  • food processor
  • bowl
  • frying pan

Directions

  1. In a small skillet, melt butter over medium heat.
  2. Add shallot and saut until soft, 3 minutes.
  3. Add garlic; cook for 2 minutes longer.
  4. Transfer to a food processor and let cool.
  5. Add Guinness, cheeses, caraway and paprika to food processor and blend until smooth. Season with salt and pepper.
  6. Place in a serving bowl, cover and chill for at least 4 hours.
  7. Sprinkle with parsley and serve with crackers and crudits.
