  • 0.7 cup banana sliced
  • teaspoons butter melted
  • inch d crêpes french (such as Melissa's)
  • 0.7 cup mangos diced ripe peeled
  • tablespoons mango chutney 
  • cup part-skim ricotta cheese 
  • tablespoons powdered sugar 
  • 0.7 cup strawberries sliced
  • teaspoon vanilla extract

Directions

  1. To prepare salsa, combine the first 4 ingredients in a bowl; toss gently. Cover and chill.
  2. Preheat oven to 45
  3. To prepare blintzes, combine ricotta, sugar, and vanilla, stirring well. Spoon 2 tablespoons cheese mixture in center of each crepe; fold sides and ends over.
  4. Place seam side down in a 13 x 9-inch baking dish coated with cooking spray.
  5. Brush butter over crepes.
  6. Bake at 450 for 6 minutes or until lightly browned.
  7. Serve salsa over crepes.
