Ingredients

  • ounces crema mexicana shredded
  • 0.8 cup zucchini shredded
  • 0.3 cup cilantro leaves fresh chopped
  • 6-inch corn tortillas soft (5 or )
  • 0.3 cup roasted garlic with roasted garlic soft
  • 16 ounces salsa verde green (salsa verde) (2 cups)
  • medium avocado diced
  • 0.3 cup spring onion sliced

Directions

  1. Heat oven to 350°F. Spray rectangular baking dish, 11x7x1 1/2 inches, with cooking spray.
  2. Mix shredded cheese, zucchini and cilantro.
  3. Spread each tortilla with about 2 teaspoons cream cheese. Spoon about 1/3 cup shredded cheese mixture onto each tortilla; spread to within 1 inch of edge.
  4. Roll up tortillas; place seam sides down in baking dish.
  5. Pour salsa over tortillas.
  6. Cover and bake about 25 minutes or until hot. Top with avocado and onions.
