  • 0.3 teaspoon pepper black freshly ground
  • cups broccoli florets ( 1 medium head)
  • teaspoon dijon mustard 
  • 1.3 cups milk fat-free
  • tablespoons flour all-purpose
  • 0.1 teaspoon nutmeg freshly grated
  • tablespoons parmesan cheese fresh divided grated
  • ounces penne pasta mini uncooked
  • 0.5 teaspoon salt 
  • 0.7 cup cheddar cheese shredded

Directions

  1. Cook pasta according to package directions, omitting salt and fat. During the last 3 minutes of cooking, add broccoli to pan; drain.
  2. Place pasta and broccoli in a large bowl.
  3. Combine milk and flour in a saucepan over medium heat, stirring with a whisk until smooth. Cook 5 minutes or until slightly thickened; remove from heat.
  4. Add 2 tablespoons Parmesan and remaining ingredients, stirring with a whisk until smooth.
  5. Add cheese mixture to pasta mixture; toss.
  6. Sprinkle with remaining Parmesan.
