  • cup celery thinly sliced
  • pound chicken breast raw freshly ground
  • tablespoons chili powder 
  • 1.5 tablespoons apple cider vinegar 
  • tablespoon garlic minced
  • 1.5 cups bell pepper green chopped
  • teaspoons ground cumin 
  • teaspoon ground pepper red
  • teaspoons honey 
  • 30 ounce kidney beans drained canned
  • 14.3 ounce chicken broth canned
  • 29 ounce no salt added diced tomatoes whole undrained chopped canned
  • 1.5 cups onion chopped
  • teaspoon salt 
  • 1.5 tablespoons cocoa powder unsweetened
  • teaspoon vegetable oil

Directions

  1. Coat a Dutch oven with cooking spray; add oil.
  2. Place over medium heat until hot.
  3. Add chicken and next 4 ingredients; cook 8 to 10 minutes or until chicken is no longer pink, stirring until it crumbles.
  4. Add kidney beans and remaining ingredients; stir well. Bring to a boil; reduce heat, and simmer, uncovered, 35 minutes.
