  • 0.3 cup spring onion chopped
  • 13.5 ounce coconut milk unsweetened canned
  • tablespoons juice of lime fresh
  • 0.5 tablespoon curry powder 
  • cup rice white cooked
  •  jalapeno minced seeded
  • 0.3 cup cilantro leaves fresh chopped
  • 14.5 ounce chicken broth canned
  •  pepper flakes minced seeded
  •  chicken breast halves boneless skinless cut into 3/4-inch pieces
  • servings lime wedges

Directions

  1. Bring chicken broth, coconut milk, curry powder and chili to simmer in heavy medium saucepan over medium heat.
  2. Add chicken and simmer until chicken is just cooked through, stirring occasionally, about 5 minutes.
  3. Mix in lime juice. Season with salt and pepper.
  4. Transfer soup to bowl.
  5. Sprinkle green onion and cilantro over. Spoon rice into each bowl. Ladle soup over.
