Ingredients

  • tablespoons brown sugar packed
  • tablespoons cornstarch 
  • 16 ounces cherries red packed in water, undrained pitted canned
  • 0.3 teaspoon almond extract 
  • drops food coloring red
  • 0.5 cup flour all-purpose
  • tablespoon cocoa powder 
  • tablespoon brown sugar packed
  • 0.8 teaspoon double-acting baking powder 
  • 0.1 teaspoon salt 
  • tablespoons butter 
  • 0.3 cup milk low-fat
  • teaspoon vanilla

Directions

  1. Heat oven to 375°F.
  2. Mix 2 tablespoons brown sugar and the cornstarch in 2-quart saucepan. Stir in cherries. Cook over medium heat 4 to 5 minutes, stirring occasionally, until slightly thickened. Stir in almond extract and food color.
  3. Pour into ungreased 1-quart casserole.
  4. Mix flour, cocoa, 1 tablespoon brown sugar, the baking powder and salt in medium bowl.
  5. Cut in butter, using pastry blender or crisscrossing 2 knives, until mixture looks like fine crumbs. Stir in milk and vanilla until mixture forms a soft dough. Drop dough by 6 spoonfuls onto hot cherry mixture.
  6. Bake uncovered 20 to 25 minutes or until topping is no longer doughy.
  7. Serve warm.
