  • 2.5 teaspoons double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • 0.3 stick butter 
  • cup buttermilk 
  • 0.3 cup cocoa powder 
  • tablespoons flour all-purpose
  • cups flour all-purpose plus more for work surface
  • 0.5 teaspoon salt 
  • 0.7 cup sugar 
  • tablespoons sugar 
  • 0.3 cup butter unsalted melted
  • 0.5 cup shortening plus more for pan
  • cups milk whole

Directions

  1. Preheat the oven to 450 degrees F.
  2. In a medium bowl, combine the flour, sugar, baking powder, baking soda and salt.
  3. Cut in the shortening with a fork until it looks like cornmeal.
  4. Add the buttermilk, a little at a time, stirring constantly until well mixed.
  5. Turn the dough out onto a lightly floured surface. Knead lightly 2 or 3 times.
  6. Roll out the dough with a floured rolling pin to 1/2-inch thickness.
  7. Cut dough into circles with a 2-inch cutter.
  8. Place the biscuits in a greased iron skillet. Gently press down the top of the biscuits.

  11. Heat butter in a cast iron skillet over low heat.
  12. Mix in sugar, flour and cocoa. Slowly pour 1 cup of milk into the skillet and whisk well to remove lumps.
  13. Whisk in remaining milk, stirring constantly, until mixture is thick, being careful not to scorch.
  14. Serve hot over biscuits.
