Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • 0.5 cup cheese blue crumbled
  •  bacon crumbled cooked
  • teaspoons dijon mustard 
  • 1.5 cups bread french cubed ()
  • 0.5 cup spring onion sliced
  • large hardboiled eggs chopped
  • 0.1 teaspoon kosher salt 
  • tablespoons olive oil 
  • cup plum tomatoes seeded chopped
  • cups baby greens chopped ( 2 hearts)
  • tablespoons shallots finely minced
  • tablespoons citrus champagne vinegar

Directions

  1. Preheat oven to 40
  2. Place bread cubes on a large rimmed baking sheet. Coat bread generously with cooking spray; toss.
  3. Bake at 400 for 10 minutes or until crisp and golden, stirring after 5 minutes. Cool completely.
  4. Place lettuce and next 5 ingredients (through eggs) in a large bowl. Cover and chill, if desired.
  5. Combine vinegar and next 3 ingredients (through salt) in a medium bowl, stirring with a whisk. Gradually add oil, stirring with a whisk. Stir in shallots.
  6. Pour dressing over salad mixture; toss gently. Top with croutons, and serve immediately.
