Ingredients

  • teaspoons double-acting baking powder 
  • 0.8 cup brown sugar packed
  • 0.3 cup butter softened
  • cups flour all-purpose
  • tablespoon ground cinnamon 
  • cup milk 
  • 0.5 cup raisins 
  • teaspoon salt 
  • 0.5 cup shortening

Directions

  1. Preheat oven to 425 degrees F (220 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. In a large bowl, combine flour, baking powder and salt.
  3. Cut in shortening until mixture resembles coarse cornmeal.
  4. Add milk all at once to dry ingredients and stir with a fork until a soft dough is formed. Turn dough out onto lightly floured surface and knead gently 8 to 10 times.
  5. Roll out to a 12 inch square.
  6. Gently spread butter over dough.
  7. Combine brown sugar, cinnamon and raisins.
  8. Sprinkle evenly on top of dough.
  9. Roll up dough lightly like a jelly-roll. Seal edge.
  10. Cut into twelve 1 inch thick pieces.
  11. Place in prepared muffin tins.
  12. Bake in preheated oven for 14 to 18 minutes, until golden.
  13. Remove from heat immediately.
  14. Serve warm.
