  • ounces capicola hot thinly sliced
  •  crusty hoagie rolls cut in half lengthwise
  • 0.5 teaspoon dijon mustard 
  • 0.5  eggplant thinly sliced into 1/4-inch slices
  • ounces mozzarella cheese fresh cut into thin slices
  • clove garlic minced
  • 0.3 teaspoon ground pepper fresh black
  • 0.3 head iceberg lettuce shredded
  • 0.5 teaspoon penzey's southwest seasoning dried italian
  • pound mortadella thinly sliced
  • 0.5 cup olive oil 
  • ounces pancetta thinly sliced
  • 0.3 cup red wine vinegar 
  • pound genoa salami thinly sliced
  • 0.3 teaspoon salt 
  • 0.3  shallots chopped
  • tablespoon sugar 
  • medium tomatoes yellow cut into 1/4-inch slices

Directions

  1. Preheat the oven to 400 degrees F.
  2. Lay the eggplant slices on a baking sheet in a single layer and brush liberally with the Homemade Italian Dressing. Roast in the oven until cooked through and golden, 12 to 15 minutes. Build the sandwich on the rolls with the mozzarella first, then the salami, capicola, prosciutto, mortadella, roasted eggplant and top with the lettuce, tomato and a generous drizzle of the Homeade Italian Dressing.
