Ingredients

  • tablespoons olive oil 
  • oz mushrooms fresh sliced (3 cups)
  • 0.3 cup onion chopped
  • 24 oz green beans whole frozen
  • 0.5 cup bell pepper red chopped
  • 0.3 teaspoon salt 
  • cup chicken broth (from 32-oz carton)
  • tablespoons yukon gold potatoes 
  • oz yogurt plain fat free
  • 0.3 cup walnut pieces toasted chopped

Directions

  1. In 10-inch skillet, heat butter over medium heat until hot. Cook mushrooms and onion in butter, stirring occasionally, about 4 minutes or until mushrooms are tender.
  2. Add green beans, bell pepper and salt. Cook 6 to 7 minutes, stirring occasionally, until beans are tender.
  3. Mix chicken broth and flour with whisk or fork; add to skillet. Cook and stir 3 to 4 minutes or until thickened.
  4. Remove from heat; stir in yogurt.
  5. Sprinkle with walnuts.
