  • slices bacon 
  • teaspoons double-acting baking powder 
  • tablespoons buttermilk 
  • large eggs 
  • teaspoon ground cumin 
  • 12 servings peppercorns fresh black
  • teaspoon salt 
  • tablespoons sugar 
  • 0.5 cup butter unsalted chilled cut into pieces
  • cup cornmeal yellow

Directions

  1. Preheat oven to 375 degrees F. Cook bacon until crisp.
  2. Transfer bacon to paper towels and drain. Crumble bacon; reserve 2 tablespoons bacon drippings.
  3. Sift flour, cornmeal, sugar, baking powder and salt into bowl.
  4. Add butter and rub in using fingertips until mixture resembles coarse meal.
  5. Whisk eggs, buttermilk, cumin and reserved bacon drippings in small bowl.
  6. Add to flour mixture and stir until moist dough forms.

  11. Place on greased baking sheet.
