  • 1.5 cups couscous uncooked
  • pound pork tenderloin thinly sliced
  • medium sweet potatoes and into peeled sliced into thin strips
  • cup bacon 
  • 0.5 cup water 
  • tablespoons honey 
  • 0.3 cup cilantro leaves fresh chopped

Directions

  1. Cook couscous as directed on package.
  2. While couscous is cooking, spray 12-inch skillet with cooking spray. Cook pork in skillet over medium heat 2 to 3 minutes, stirring occasionally, until brown.
  3. Stir sweet potato, salsa, water and honey into pork.
  4. Heat to boiling; reduce heat to medium. Cover and cook 5 to 6 minutes, stirring occasionally, until potato is tender.
  5. Sprinkle with cilantro.
  6. Serve pork mixture over couscous.
