  •  applewood-smoked bacon diced
  • 0.3 teaspoon pepper black freshly ground
  • 12  make-ahead crepes 
  • 1.3 cups milk fat-free
  • 1.5 tablespoons flour all-purpose
  • tablespoons parsley fresh chopped
  • teaspoon thyme leaves fresh chopped
  • ounces gruyère cheese shredded
  • ounce pre mushrooms 
  • 0.5 teaspoon salt 
  • 0.3 cup shallots minced ( 2)
  • pound chicken breasts boneless skinless cut into 1/2-inch pieces

Directions

  1. Cook bacon in a large nonstick skillet over medium-high heat until crisp.
  2. Remove bacon from pan, reserving 1 1/2 teaspoons drippings in pan; set bacon aside.
  3. Add chicken to drippings in pan; saut 3 minutes or until browned.
  4. Add shallots, thyme, and mushrooms; saut 5 minutes or until tender.
  5. Combine milk and flour, stirring with a whisk until well blended. Gradually stir milk mixture into chicken mixture; bring to a boil. Reduce heat, and simmer until thick (about 2 minutes).
  6. Remove from heat; stir in bacon, cheese, parsley, salt, and pepper. Spoon about 1/4 cup chicken mixture in the center of each Make-Ahead Crepe; roll up.
