In this recipe, fresh green beans are cooked to tender perfection, then combined with hearty diced potatoes, savory bacon bits, and a rich, creamy base. The use of baking soda in the initial green bean cooking process ensures they retain their vibrant green color and have a delightful snap when you bite into them. The potatoes, cooked separately and then combined with the green beans, add a comforting, starchy element that balances out the dish.

The creamy aspect of the soup comes from a blend of milk and cream of chicken soup, which not only binds the ingredients together but also infuses the soup with a rich, comforting flavor. The addition of melted butter and soft, translucent onions cooked with bacon bits adds layers of taste and texture that elevate this soup from good to great.

To enhance the soup's flavor, it's seasoned with a generous amount of salt and ground black pepper, ensuring that every spoonful is packed with delicious taste. The cooking process is designed to allow the flavors to meld together, resulting in a soup that's as satisfying to the soul as it is to the palate.

  • tablespoon baking soda
  • 0.3 cup butter melted
  • 10.5 ounce cream of chicken soup canned
  • cups green beans fresh trimmed cut into 1-inch pieces
  • servings pepper black to taste
  • cups milk
  • 0.5 cup onion diced
  • 1.5 cups potatoes diced peeled

Equipment

  • frying pan
  • pot

Directions

  1. Place the green beans into a pot with enough water to cover.
  2. Add the baking soda to the water; bring the mixture to a boil, reduce heat to medium, and cook until the green beans are nearly tender, 7 to 10 minutes.
  3. Drain the water from the green beans; set aside.
  4. Place the potatoes into a large pot with enough salted water to cover; bring to a boil, reduce heat to medium, and continue cooking until almost tender, about 20 minutes.

  8. Place the large pot over low heat and cook the soup at a simmer until hot and the flavors have melded, about 30 minutes.
