Ingredients

  • tablespoon thyme dried fresh minced
  • tablespoons juice of lime 
  • 0.5 teaspoon lime zest grated
  • 0.3 cup mayonnaise reduced-fat
  • 0.3 cup cream sour reduced-fat
  • 0.5 teaspoon pepper 
  • cups potatoes - remove skin red cubed
  • 0.5 teaspoon salt

Directions

  1. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until potatoes are tender.
  2. Drain. Cool potatoes for 10 minutes; transfer to a large bowl.
  3. Meanwhile, in a small bowl, combine the mayonnaise, sour cream, lime juice, thyme, lime peel, salt and pepper.
  4. Pour over potatoes; toss gently to coat.
  5. Serve warm or chilled.
