Ingredients

  • 1.5 lb butternut squash peeled cut into 1/2-inch cubes (3 1/2 cups)
  • tablespoons flour all-purpose
  • tablespoons juice of lemon 
  • teaspoon ground cinnamon 
  • 0.3 teaspoon salt 
  • 0.3 cup breadcrumbs dry (any flavor)
  • tablespoons chicken broth (from 32-oz carton)

Directions

  1. Heat oven to 350° F. Spray 8-inch square pan with cooking spray. In large bowl, mix all ingredients except bread crumbs and broth.
  2. Spread in pan.
  3. Bake uncovered about 50 minutes or until squash is tender.
  4. Set oven control to broil.
  5. Mix bread crumbs and broth; sprinkle over squash. Broil squash with top about 4 inches from heat about 3 minutes or until bread crumbs are brown.
