Ingredients

  • 0.3 pound finely-chopped ham diced cooked
  • 1.5 tablespoons breadcrumbs plain dry fine
  • large eggs 
  • cup cup heavy whipping cream 
  • cup onion frozen chopped

  • ounce swiss cheese shredded (2 cups)
  • tablespoon butter unsalted
  • cup milk whole

Directions

  1. Preheat oven to 425°F with rack in middle.
  2. Butter quiche dish, then sprinkle all over with bread crumbs.
  3. Cook onions with ham in butter in a 12-inch heavy skillet over medium-high heat, stirring occasionally, until pale golden, about 5 minutes.
  4. Spread in dish, then evenly sprinkle cheese on top.
  5. Whisk together eggs, cream, milk, and 1/2 teaspoon pepper and pour over cheese.
