  • teaspoons olive oil 
  • 0.5 cup onion thinly sliced
  • cloves garlic finely chopped
  • teaspoon ginger grated
  • 0.8 cup vegetable stock 
  • 0.5 cup lite coconut milk canned reduced-fat (not cream of coconut)
  • teaspoon curry powder 
  • 0.3 teaspoon salt 
  • Dash ground pepper red (cayenne)
  • cup couscous whole wheat uncooked
  • 0.3 cup golden raisins

Directions

  1. In 2-quart saucepan, heat oil over medium heat.
  2. Add onion, garlic and gingerroot; cook 1 minute, stirring constantly.
  3. Stir in broth, coconut milk, curry powder, salt and red pepper.
  4. Heat to boiling. Stir in couscous and raisins.
  5. Remove from heat. Cover; let stand 5 minutes. Uncover; fluff with fork.
