Ingredients

  • bunch collard greens stemmed chopped ( 12 large leaves)
  • teaspoon curry powder 
  • cloves garlic minced
  • 0.3 teaspoon ground ginger 
  • tablespoon olive oil 
  • 0.5 medium onion chopped
  • 0.3 teaspoon pepper 
  • 0.5 teaspoon salt 
  • teaspoon butter unsalted
  • 0.8 cup vegetable broth low-sodium
  • 0.5 cup wine

Directions

  1. Melt butter with olive oil in a large skillet over medium-high heat.
  2. Add onion; cook, stirring often, until slightly softened, about 2 minutes.
  3. Add collard greens and cook, stirring occasionally, until greens have wilted, about 5 minutes.
  4. Stir in garlic, curry, ginger, salt and pepper and saut for 1 minute. Stir in broth and wine, bring to a boil, cover, reduce heat to low and simmer, stirring occasionally, until greens are tender, about 20 minutes.
