  • teaspoon double-acting baking powder 
  • teaspoon baking soda 
  • 0.5 cup canola oil 
  • 0.8 cup cocoa powder 
  • 0.3 cup dairy-free yogurt plain
  • cups flour all-purpose
  • 12 servings dairy-free ice cream for serving your favorite ( flavor)
  • cup milk alternative plain
  • 0.3 teaspoon salt 
  • cups sugar 
  • teaspoon vanilla extract 
  • cup water boiling

Directions

  1. Spray mini shortcake pan (available at Williams-Sonoma) with nonstick cooking spray.Preheat your oven to 350ºF.
  2. Combine all ingredients, except the frozen dessert, in bowl of electric mixer.
  3. Mix on medium speed until smooth.
  4. Pour into prepared pan.
  5. Bake for 35 to 45 minutes.Allow to cool completely before removing the shortcakes from pan.Top with frozen dessert and other toppings as desired.
