  • tablespoons juice of lemon 
  • cups milk whole

  2. Let mixture standfor 15 minutes at roomtemperature. As timepasses, the curds willbegin to separatefrom the whey. If onlya few curds form, yourlemons may not beacidic enough; addanother 1 tablespoonlemon juice, gentlystir so you don't breakup the curds toomuch, and let standfor 5 minutes more.
  3. Using a largespoon (not slotted)or measuring cup,spoon curds intoa cheeseclothlinedsieve set overa large bowl. Thelonger you drain thericotta, the denserand more flavorfulthe cheese will be.
