  • cups beef stock 
  • tablespoon calvados 
  • cup cheese grated
  • servings pepper black freshly ground
  • medium onion finely chopped
  • tablespoon butter unsalted

Directions

  1. Preheat oven to 450°F. Cook onions in a12" nonstick skillet over high heat, stirringconstantly, until soft and caramelized,about 15 minutes.
  2. Add butter and tossonions to coat.
  3. Remove pan from heatand stir in Calvados. Return pan to heatand continue cooking until Calvados isabsorbed, about 30 seconds.
  4. Add stockand bring to a simmer. Simmer until soupis reduced to 4 cups, about 5 minutes.Season soup to taste with salt and pepper.
  5. Place ramekins on a rimmed bakingsheet. Divide soup among ramekins. Topeach ramekin with 1-2 slices of bread.
  6. Sprinkle 1/4 cup cheese over each.
  7. Transferbaking sheet with ramekins to oven andbake until cheese is bubbly and brownedin spots, about 4 minutes.
