  • 0.5 lb andouille sausage diced cooked
  •  bay leaves 
  • 60 ounce kidney beans drained canned
  • 0.3 teaspoon ground pepper 
  • cup celery minced
  • cups rice cooked
  • 0.3 cup parsley fresh minced
  • tablespoon garlic minced
  • cup bell pepper green minced cored
  • tablespoons cooking oil 
  • cups onion minced
  • servings bell pepper 
  • lb kielbasa diced cooked
  • servings salt 
  • cup spring onion minced
  • tablespoon sugar 
  • teaspoon all the tabasco sauce you handle 
  • 0.5 teaspoon thyme leaves dried
  • 28 ounces tomatoes diced undrained

Directions

  1. Heat oil over medium-high heat in a large saute pan, and saut garlic, onion, green pepper, and celery until onions are translucent.
  2. Add parsley, cayenne, bay leaf, thyme, Tabasco, sugar, salt, pepper, tomatoes, and beans.Turn the heat down to medium-low, and let the mixture simmer for a few minutes.Put 2-3 cups of the mixture into a large pot with some of the liquid and pure it using a food processor, blender, or hand blender.
  3. Add the remaining saute mixture to the pot, and add sausages. Simmer for 30 minutes.
  4. Remove the bay leaf and mix well with rice.
  5. Garnish with scallions.
