Ingredients

  • cups broccoli 
  • medium carrots sliced
  • 1.5 cups chicken broth organic swanson® (regular, Natural or Certified )
  • teaspoons cornstarch 
  • 0.3 cup cilantro leaves fresh chopped
  • teaspoons ginger fresh grated
  • teaspoons juice of lemon 
  • tablespoons soy sauce low-sodium
  • small onion chopped
  • cups rice long-grain white hot cooked
  • cups rice long-grain white hot cooked
  • pound chicken breast boneless skinless cut into strips
  • tablespoons vegetable oil

Directions

  1. Mix cornstarch, broth, soy sauce, lemon juice and ginger until smooth. Set aside.
  2. Heat 1 tablespoon oil in medium skillet over medium-high heat.
  3. Add chicken and stir-fry until browned and done.
  4. Remove chicken.
  5. Heat remaining oil over medium heat.
  6. Add broccoli, carrots and onion and stir-fry until tender-crisp.
  7. Stir cornstarch mixture and add. Cook until mixture boils and thickens, stirring constantly. Return chicken to skillet and heat through.
  8. Sprinkle with cilantro.
  9. Serve over rice, if desired.
