  • cups cucumber diced peeled seeded (from 1 large)
  • ounces feta cheese crumbled
  • 0.3 cup kalamata olives black pitted halved
  • tablespoons olive oil extra virgin extra-virgin
  • 0.5 teaspoon oregano dried
  • tablespoons parsley fresh italian chopped
  • cup bell pepper diced red (from 1 large)
  • 0.3 cup onion diced red
  • 1.5 tablespoons red wine vinegar 
  • cups tomatoes diced seeded
