  • 0.5 cup feta cheese crumbled finely
  • tablespoons optional: dill fresh chopped
  • tablespoon garlic minced
  • cup greek yogurt 
  •  green onions chopped
  • teaspoons juice of lemon fresh
  • 0.5 teaspoon lemon zest fresh
  • tablespoons olive oil 
  • 0.5 teaspoon salt 
  • 0.3 cup shallots roughly chopped
  • 12 ounces spinach leaves

Directions

  1. Heat oil in a large frying pan over high heat.
  2. Add shallots, onions, and garlic and cook, stirring often, until fragrant, about 1 minute.
  3. Add spinach and cook, stirring often, until wilted, about 2 minutes.
  4. Using a slotted spoon, scoop spinach into a food processor; pulse until roughly pured, about 5 pulses.
  5. Add remaining ingredients except pepper, pulse once just to combine, then season to taste with pepper.
