Ingredients

  • lb green beans fresh trimmed
  • 0.3 cup creamy peanut butter 
  • tablespoon sugar 
  • tablespoons rice vinegar 
  • tablespoons soya sauce 
  • tablespoon vegetable oil 
  • 0.3 teaspoon pepper red crushed
  • piece ginger peeled finely chopped (1 inch) (2 tablespoons)
  • clove garlic finely chopped
  • serving peanuts chopped

Directions

  1. In 3-quart saucepan, heat 6 cups water to boiling over high heat.
  2. Add beans to boiling water. Cook 4 to 6 minutes or until crisp-tender; drain. Rinse with cold water; drain. Cover; refrigerate while making dip.
  3. In medium bowl, beat remaining ingredients except peanuts with wire whisk until smooth. Cover; refrigerate at least 30 minutes to blend flavors. Stir before serving.
  4. Garnish with peanuts.
  5. Serve beans with dip.
